Ashes of Annihilation are post-Moon Lord crafting materials that are dropped by Supreme Witch, Calamitas. They are used to craft Shadowspec Bars among other items, and the Ceremonial Urn, a non-consumable item used to summon Supreme Witch, Calamitas.
